This Friday, I’m sharing with you my sweet potato hash. This is something I like to throw together on the weekends for my hubby. I think it’s extra tasty because I add beets to the mix. Though they add great favor, they pretty much turn everything red, so the dish is not as beautiful as you might imagine..take a look!
Sweet Potato Hash
Prep Time: 10 minutes
Cook Time: 20 minutes
Serving Size: 2
1 small onion
1 large sweet potato or 2 small sweet potatoes
2 tablespoons of olive oil
1 bell pepper (color of choice)
1 large skillet
1 red beet, chopped
Season to taste: Sea Salt, Black Pepper, Garlic Powder
Sauté onion, bell pepper, potato until cooked thoroughly (I like potatoes a little crispy). Add beets, 6 eggs, scrambled, pore in the pan and mix it all up and sauté until eggs are cooked thoroughly. Season to taste. Enjoy!
