My Favorite Chili Recipe

Chili can be a year round affair, though nothing beats it during the cold months of Winter. It’s also makes for an excellent meal during an NFL Sunday, especially when you’ve got to be ready to feed a whole army. At least I know my fellow Packer fans love their chili!

I wanted to share my favorite chili recipe with you; One that is low in fats and easy to throw together in the crockpot in the morning and enjoy that same day.

Ingredients:

1 medium onion, chopped

1 medium green, red, yellow bell pepper, chopped

1 tbs olive oil

1/2 cup water

1, 16 oz can diced tomatoes (I like the kind with chilis in them)

1, 8oz can diced tomatoes

1, 8 oz can tomato sauce

2, 16 oz can kidney beans, drained

1 16 oz can black beans, drained

1 16 oz can garbanzo beans, drained

1 can of corn drained

1 pound of lean ground beef or bison (optional)

1-2 tbs chili powder

1-3 cloves garlic, minced

1-2 tsp cumin

 

Directions:

In pan sauté onions and peppers in olive oil and water till translucent. Add beef and cook thoroughly. Transfer to a Crockpot on high and add tomatoes, sauce, corn and beans. Season to taste with chili powder, garlic and cumin. Bring to a boil, reduce heat, let simmer. Option to put on low and let simmer all day.
